3 Ripe Plantains
1/3 Cup Coconut Oil
1 Cup Coconut Yogurt ( if you don’t mind dairy…Cream Cheese Or Cottage Cheese )
1 Cup Fresh Fruit ( Blueberries, Strawberries, Raspberries etc)
1 Teaspoon Sea Salt
1/3 Cup Water
Pre-Heat oven to 350°
In a blender add Plantains, Coconut Oil, Sea Salt and Water. Blend until smooth and texture is like that of pancake batter.
On a cookie sheet (you will need 2) , spread batter out in even circles 1/4″ thick. (6 per cookie sheet)
Put in oven and cook for 10 minutes. After 10 minutes switch racks with the 2 cookie sheets for even cooking. Cook for another 12 minutes.
While crepes are cooking start the filling.
In a medium bowl mix together the Cream Cheese or Cottage Cheese and berries of choice.
Once plantains are cooked, let cool for a 2 minutes. Fill with filling and roll!
